
The grapes for our pinnacle 2016 Sarus Shiraz are of exceptional quality, our winemakers select vineyards which deliver a range of flavours and character. 2016 had a wet winter, then a mild summer. This gave the vines an extended growing season, that allowed the grapes to develop complexity and depth. Following fermentation, the wine is placed into a mix of French and American oak barrels for maturation for between 10 – 18 months.
This is a limited release wine that can be enjoyed now, or cellared for 5 to 10 years for peak maturity.
Winemakers Notes
Dark ruby red in colour, clear and bright. On the nose aromas of briary dark berry fruit with supporting hints of chocolate and freshly ground coffee. Full bodied. The palate offers a taste combination of fleshy dense dark plum fruit flavours alongside fresher, crunchier red berry fruit and raspberry notes.
A vibrant natural acid backbone and a fine soft tannin frame ensures a sense of directly and refreshment are retained. Long lengthy finish.
